BETTER FOR YOU BROWNIES

The disaster chef returns! Although, this time I was more successful with my baking. The recipe that I used uses slightly healthier foods and I wanted to try it out as the main ingredient is sweet potato!

I found this recipe on Poppy Deyes' blog and was intrigued by the ingredients used so thought I would give it a go.

You will need:

  • 500g of sweet potatoes

  • 6 tbsp of pure maple syrup.

  • 2 tbsp of melted coconut oil.

  • 100g of ground almonds.

  • A pinch of salt.

  • 100g of ground oats.

  • 6 tbsp of raw cacao powder


1. Preheat the oven to 180 degrees. Peel the potatoes, cut them into small pieces and boil them for around 20 minutes until they become soft.

2. While you are waiting for the potatoes to boil, combine the other ingredients into a bowl, ready to add the potatoes in afterwards.

TIP!- You can put porridge oats into a food processor if you don't have any ground oats.

3. Once boiled and strained, put the potatoes into a food processor and blitz them until they are smooth. Then add them to your bowl and mix well.


4. Line a baking tray with greaseproof paper and then add the mixture in. Don't use on that's too big as the brownies won't rise. Smooth out the top and them pop it into the oven for 40 minutes.

5. Whilst the brownies are cooking, you can make the icing for them. You will need:

  • 2 tbsp of coconut oil.

  • 2 tbsp of almond butter.

  • 1 tbsp of maple syrup.

  • 2 tbsp of cacao powder.

Simply melt and combine all of the ingredients together. The icing may need a lot of mixing as the oil is harder to combine into the mixture. Let it harden up a bit in the fridge for 20 minutes before putting on top of the brownies.

6. Remove the tray from the oven and leave the brownies to cool on a plate fully.

7. Once fully cooled, spread the icing on top. If the brownies are still slightly warm, the icing will melt when spread. Then cut them into squares and enjoy!

This recipe is very simple but you will need to make sure you have a good hour or two to be able to make them. They weren't very hard to do (which is good for me) and they taste rather good!

I really enjoyed making these and I will trying out some more of Poppy's recipes in the future.
